What Happened to Charlotte's Eastern Whole-Hog BBQ?

Bill Spoon's closed in 2020. Bubba's closed in January 2026. Charlotte lost its last active Eastern whole-hog pit; use the current alternatives below without mistaking them for the same method.

Charlotte has no active Eastern North Carolina whole-hog pit left inside the city. Bill Spoon's closed on September 16, 2020. Bubba's Barbecue, the last one, closed in January 2026. That is why an old Charlotte recommendation may send you looking for a kind of BBQ the city no longer serves.

Bill Spoon's built the line

Bill Spoon opened on South Boulevard in 1963, when the road was still two lanes. The restaurant cooked whole hog with vinegar and pepper, chopped it by hand and served it with mustard slaw and hush puppies. Steve Spoon, the founder's grandson, started working there at ten and later bought the restaurant. It closed after 57 years.

Bubba's carried the method forward

Ralph Miller bought the restaurant tied to that lineage in 1987, renamed it Bubba's and moved it to Sunset Road in 1994. It survived a two-year pandemic closure and reopened in September 2022. In January 2026, Miller closed for good after about 40 years because his health no longer let him do the physical work of whole-hog barbecue.

What is still here

Sweet Lew's names a different North Carolina tradition: Lexington-style pork shoulder. Midwood Smokehouse serves chopped Carolina pork with Eastern vinegar sauce, but does not claim Eastern whole hog. Noble Smoke reaches from Texas to Carolina without naming one Carolina lineage.

Those are good places to eat. They are not replacements for what closed. A whole-hog pit carries a labor-heavy method, a particular balance of meat and skin, and a direct link to Eastern North Carolina cooking. Once the last cook stops lifting pigs onto the pit, the loss is bigger than an empty building.
